Try "freshface". Gives you the choice of 3, 5, or 7 screens.

adding more panels and putting Widgets/Apps will cause your phone to slow down/lag.

EDIT: i also have seen an app (it is still being worked on and not in the Market yet) that adds more screens and another thing, but i forgot what it's called or when it comes out.
